Stir Fried Beans with Quorn Mince

Serves: 2

Time: 30 minutes

(Suitable for vegans)

Now this is usually made with pork mince but I have substituted it with Quorn mince. I've read that Quorn mince has many benefits – one being that it's low in fats. I was really surprised to find that this dish tasted EXACTLY the same with the substitution and will be making it this way from now on!

For the sauce:

• 1x tbs hoisin sauce

• 4x tbs vegetable stock

• 1x tbs chilli garlic sauce

• 1/2 tbs black bean sauce

• 1x tsp sesame oil

• 1x tbs light soy sauce

For the beans and mince:

• 150g Quorn mince

• 2x light soy sauce

• 1x Chinese rice wine

• 1x tsp minced ginger

• 1x tbs of minced garlic

• a few spring onions chopped

• 300g Trimmed green beans

• 1x cup cooking oil

Step 1: Mix the Quorn mince with the soy sauce and Chinese rice wine

Step 2: Mix together all the ingredients for the sauce in a bowl

Step 3: Heat up the cup of cooking oil and fry the green beans until they become wrinkled which takes roughly 7 mins. Remove them from the oil and onto paper towel.

Step 4: Remove all the cooking oil leftover apart from roughly 1x tbs and use that to heat up the minced ginger and minced garlic.

Step 5: Return the Quorn mince back to the pan and stir thoroughly with the ginger and garlic. Add the spring onions.

Step 6: Add the sauce to the pan and stir thoroughly before adding the wrinkled green beans. Stir thoroughly and serve hot.
