Smashed Cucumber Salad

Serves: 2

Time: 15mins to make, 1.5hr resting time

For the dressing: 


• 1 tbs garlic

• 1 tbs Chinese vinegar

• 1 tbs soy sauce

• 1 tsp chilli flakes

• 1 tsp sesame oil

• 1 tsp sugar


• 2 large cucumbers

• Coriander for garnish

Step 1: In a bowl, mix together all of the dressing ingredients


Step 2: Slice cucumbers into 1cm pieces.


Step 3: Place cucumbers in-between some baking paper and using a rolling pin (or something similar), lightly hit the cucumber until it’s smashed. 


Step 4: Place cucumber into a bowl and dust some salt over it to draw the water out for half an hour. Remove from bowl and pat dry with paper towel.


Step 5: Add cucumber into into the bowl with the dressing and stir through well. Cover and pop in the fridge to sit for an hour before serving. Garnish with coriander.
