Dandan Mein

Serves: 2

Chilli OIl:

• 150g chilli flakes

• 1x tsp soy sauce

• 1x tsp chinkiang vinegar

• 200g neutral oil (vegetable or sunflower)

• 2x tbs Szechuan peppercorns 

• 2x pieces star anise

• 2x cloves peeled garlic

• 2x slices ginger

• 1x tbs sesame seeds

 

Protein:

• 150g pork mince

• 100g chopped green beans 

• 1x spring onion chopped

• 1x garlic clove minced

• 1x chopped chilli 

• 1x tbs Chinese rice wine

• 1x dark soy sauce

• 1x light soy sauce

• 1/2 tbs white sugar

• 1x tsp Chinese five spice

• 1x tsp Chinese white pepper

• 1x tbs hoisin sauce

 

Sauce/Soup

• 2x minced garlic cloves

• 2x tbs sesame paste

• 4x tbs of the chilli oil

• 1x tsp Chinese five spice

• 1x tsp Chinese white pepper

• 1x tsp white sugar

• 2x cups homemade chicken broth (using a cornfed chicken, spring onions and ginger) 

As an alternative, you can use 1x tsp Knorr bouillon powder with water or just use water.

 

300g noodles (cooked to packet instructions)

Any steamed vegetables you might want to add (pak choi is the best)

Sesame seeds and chopped spring onions for garnish

Step 1: In a heatproof bowl, put your chilli flakes, vinegar, soy sauce, sesame seeds and mix well.

 

Step 2: Heat your oil with the garlic, peppercorns, star anise and ginger until the oil hits 160º. 

 

Step 3: Using a strainer, pour the oil onto the bowl of chilli flakes. Mix well and that'll be your chilli oil.

 

Step 4: Heat some oil in a non-stick pan and stir fry your spring onions and garlic until fragrant then add your pork mince and rice wine. Cook until brown.

 

Step 5: Add your green beans to the pan as well as your chillies and cook for a few minutes.

 

Step 6: Add the dark soy, light soy, hoisin, five spice, white pepper and sugar. Cook until it the sauce almost reduces completely. Set aside.

 

Step 7: In two large bowls, build your sauce/soup base by adding 1x minced garlic clove, 1x tbs sesame paste, 2x tbs chilli oil, 1/2x tsp Chinese five spice, 1/2x tsp Chinese white pepper, 1/2 tsp white sugar in each bowl. 

 

Step 8: Heat up your chicken stock (or if you're using bouillon mixture or water). Pour 1x cup in each bowl and stir until well combined.

 

Step 9: Put your noodles into your sauce/soup followed by the pork mince and any other vegetables you like. Garnish with sesame seeds and chopped spring onions.
